1. Chop up the florets

 

2. Toss them into a pan of cold water. Then turn up the heat.

 

3. Let it boil a little. Even better with a steamer. Must be al dente.

 

4. Drain and shred the florets into rice-like pieces in a food processor.

Bagya, my left-hand person, when it comes to cooking with cauliflower. She's always in a happy mood. And she is especially happy because that day, the price of a cauli had dropped to below Rs 10. She's thrifty too.
