Creamy Spinach Risotto

You’ll need

  • 500 grams of cauliflower rice. See recipe for ‘Plain Rice’. Set this aside in a pretty dish. Pretty is everything when it comes to food.

  • 2 tbsp butter

  • 1 medium onion, finely chopped

  • 3 or 4 cloves of garlic, finely chopped

  • 500 gms fresh spinach leaves, washed. Don’t chop the spinach yet

  • 1 cup heavy cream

  • 1 tbsp grated Parmesan or Romano cheese

  • Salt, to taste

  • Pepper, to taste

  • A pinch or two of freshly grated nutmeg

 

How To

  • Put the spinach in a large strainer or colander in the sink.

  • Slowly pour a kettle of boiling hot water over the spinach, allowing it to drain. Once the kettle is empty, check to see if the leaves have wilted. If not, pour another kettleful. If you do it slowly, one kettle should do.

  • Squeeze the spinach dry (when it’s cooled off a bit, of course) and pat it dry.

  • Now chop it up, coarsely.

  • Meanwhile, heat the butter in a saucepan and wait for it to melt.

  • Toss in the onions and the garlic. Cook them for about five or six minutes.

  • Give the mixture a whirl and throw in the spinach leaves.

  • Cook for a few minutes. Add the salt, pepper and then the grated nutmeg.

  • Now pour the cream in and reduce the flame.

  • Add the Romano cheese and make sure it dissolves—all over a low flame.

  • Let it cook and come to a bubble slowly. You should have a soupy, but thick, mixture of cream and spinach.

  • Pour this onto the cauliflower risotto sitting in the pretty dish and mix well.

  • Wipe off the edges of the bowl so it doesn’t look messy and you are ready to serve.

 

Carb Count

  • 500 gms of cauliflower has 14 gms in net carbs

  • 500 gms of spinach contains about 7.15 gms in net carbs

  • The Parmesan or Romano cheese has .2 gms in carbs (no

  • fibre, so no net carbs)

  • The onion has less than 10 gms in net carbs

  • The heavy cream doesn’t have any carbs at all.

  • Add it all up, that’s a total of about 31.35, say 32 gms of

  • carbs.

  • Breaking it down to less than 5.5 gms per person,

  • if six of you are sitting down to dinner and this is a side

  • dish.

 

Serve with

This is usually a side dish, with a steak or even as a bed for a poached egg. But in a pinch, you can eat it as a light meal or between-meal snack.
